In my first few years of college, I loved going to Tropical Smoothie. I loved it so much, I went almost three times a week. Being that I was a poor college student, I attempted to make my own Buffalo Chicken Wraps. I was reminded of this when my husband and I went last week to get a smoothie. I have been in somewhat of a lunch rut, more so making every quinoa dish known to man. It gets old after a while. So, I took the menu home and dreamed up a Jerk Chicken Lunch Bowl that is just phenomenal!
Jerk Chicken Lunch Bowl
Ingredients
1.3 lb Boneless Skinless Chicken Tenders
1 1/2 Cups of Asparagus (I used frozen, which tasted good, but fresh would be even better)
1/2 Cup of Corn
1/4 Cup of White Onion, Diced
1 Can of Black Beans, Rinsed
1/4 Cup of Fat Free Shredded Mozzarella Cheese
2 Tablespoons of Jerk Seasoning (I used Grace, courtesy of my Uncle)
2 Cups of White Jasmine Rice
1 Tablespoon of Garlic, Diced
1 Tablespoon of Southwest Seasoning (I used Ms. Dash Southwest blend)
Salt and Pepper to taste

Directions
1. Rub jerk seasoning onto the chicken tenders, cover in plastic, and let marinate for an hour or more if possible.
2. Heat grill pan to medium heat. Add asparagus and corn. Season with salt, pepper, and, garlic.
3. Cook the corn and asparagus until there are nice grill marks and the asparagus is tender. Remove from the grill pan and place in a separate bowl. 
4. Cook Jasmine Rice per package directions. Once complete, add Southwest Seasoning
5. Add the chicken to the grill pan and allow to cook through. When complete, cut into bit size pieces
6. Divide ingredients into pre-pack lunch bowls.

The next time I make this, I'm going to try adding the jerk seasoning to the veggies and chicken, allowing to marinate, and grilling together. Even adding this to a foil pack and grilli
 
I have been on a fish craze recently and dreamed up the most delicious salmon salad.
The base of the salad is the Super Greens from I Love Organic Girl. They are so tasty, last a long time, and bring so much color to any dish! I added cucumbers and of course avocado. But the main event...this delicious...smokey..and just plain decadent salmon. I bought a cedar plank from Publix that my husband used to grill the fish. I just love the smokiness. I seasoned the fish with salt, pepper, lemon, a little bit of honey, and chipotle seasoning. You can use whatever kind of dressing you would like. Raspberry Vinaigrette was good!

To accompany this salad, I made roasted brussel sprouts in bacon! I hate brussel sprouts! But just like peas, I gave them a chance! And they were fantastic. The light char on them crisped them up and caramelized them!

Oven Roasted Brussel Sprouts with Bacon
Ingredients
8-10 oz of fresh Brussel Sprouts, cut in half
2-3 slices of Bacon, I used Center-Cut
Salt

Directions
1. Preheat oven to 375
2. I sauteed the bacon on medium heat until the bacon got crispy, removed the bacon, and added the brussel sprouts, allowing them to cook.
3.
I spread out all ingredients onto a baking sheet and good for 17 minutes.
4. ENJOY!

I have been so unbelievably busy; I haven't had any time to blog! I have literally been stretched thin between working full time and going to full time...and oh...being sick!
It has been a long week of non-stop hacking, headaches, and nasal congestion! There's something about patients not covering their mouths that get me sick every time! It's a never ending battle!

Anywho...I've been working on and discovering food in the mean time.

A few weeks ago, I took my husband to Discovery Cove and we had the greatest time! While we were in Orlando, we went to my favorite grocery store: Patel Brothers!
We got an endless array of desserts, breads, and Chai tea! It's always adventure at Patel Brothers.

We also went to Jason's Deli, and it makes me so sad there isn't one in our town. :(

I forgot to take a picture, but let me just tell you about my great love for the Tortilla Soup there! It is so perfect on a cold, rainy night or really just anytime! It's so smokey and spicy and just so wonderful and comforting! And of course, not to mention the wonderful salad bar.

We also discovered this place called The smoothie Room where I got the most wonderful beet, orange, carrot, and ginger juice called the Downtown Sunset! Unfortunately, I don't have a picture to show how beautifully red it is! Since the Smoothie Room is too far away to go all the time, I recreate the recipe at home:


Downtown Sunset
Juice the following:
1 Beet
2 Oranges
2 Carrots
1-2 Inches of Fresh Ginger

Another discovery I made is the new Grilled Market Salad with Berry Balsamic Vinaigrette Dressing from Chick-Fil-A. It is the perfect healthy fast-food alternative! It is full of fruits, berrys, nuts, granola, and only 180 Calories (not including the dressing).  And of course, you can't go to Chick-Fil-A without getting some warm waffle fries!


I am really into this new show on Food Network called The Kitchen. On their first show, they made a recipe using the Food Networks most looked up ingredients: Chicken, Quinoa, and Kale. It had brussel sprouts, which I was a little nervous about, but it all turned into this wonderful creamy salad and spicy chicken. It was delicious!

A couple of years ago, Oscar Mayer used to make fancy Lunchables for adults. I loved them! They don't make them anymore, but I did my own take on a sophisticated,healthy, adult Lunchable.
Ingredients
2 Ryvita Crackers
1 Laughing Cow Wedge
2 Slices of Low Fat, Low Sodium All Natural Turkey Breast (or meat of choice)
1 Slice of Low Fat, Low Sodium Lacey Swiss (or cheese of choice)
Spinach

Per each Ryvita cracker I added half a wedge of laughing cow, placed the spinach, then half a slice of cheese, and one slice of turkey. On the side is the Lightened Up Protein Power Goddess Bowl from oh she glows.

Next, I want to share a smoothie I made yesterday that is delicious, creamy, & good for your skin!

Ingredients
8 oz of Green Tea
1/3 of a Pineapple
1 Mango
2 Cups of Kale
Ginger
1 Banana

Blend until smooth & enjoy!
